Great book

I am just starting out as a chocolate maker and this book has been invaluable to me. It has great recipes, thorough explanations, and all the theory behind everything for when I get confused or need to modify certain ingredients or am trying to use different tools. I HIGHLY recommend it!

Exactly what I wanted

Its beautiful, its detailed, and the recipes work wonderfully. I'm new to candy making, but I found the book accessible and extremely useful. If you care about making good candy, and knowing why it is doing what its doing, this is the book for you.
