With patented cutting edges originally designed for shaving wood, the Microplane grater was created to meet the demand for a better kitchen grater. This box grater has two large grating areas: use the fine blade side for citrus zest, hard cheese, nuts, ginger, and garlic; use the extra coarse side for grating cheddar and other soft cheeses and vegetables. The grater includes a knuckle-protecting slider attachment that fits on either side and protects fingers and ensures added control. The grater features surgical-grade stainless steel blades and rubber feet for stability. Unlike most graters in which the cutting edges are formed by punching holes through stainless steel or tin, the Microplane grater's tiny razor-like edges are formed through a process of photo-etching (in which holes are dissolved with a chemical), leaving edges that finely slice the food instead of tearing or shredding.
